I know that breakfast can be tough. There never seems to be enough time in the morning to prepare the sort of foods you want to be eating to fuel your body for a packed schedule of work or play (or both!). Or, even when you have the time to slap something in the pan, it's hard to find the appetite for that first meal of the day.
I spent years skipping breakfast altogether and feeling sluggish, unmotivated, and ravenous by lunchtime. Even though I didn't *feel* hungry, the absence of morning fuel was a huge part of my metabolic dysfunction. I didn't have energy or focus, and relied on caffeine to fill in the gaps. By my third cup of coffee, I had the jitters, and I was already planning my next cup. It was a recipe for anxiety, exhaustion, and grouchiness.

Well, today, I'm sharing my favorite breakfast hash to get you out of your slump, kickstart your metabolism, and give you something drool-worthy to get you in the kitchen every morning (no matter how packed your day is!).
This hash is the first thing I reach for when I have a fun winter day ahead. Yesterday's blizzard made me excited to break out my classic skis and spend the day exploring our beautiful trails here - and the best way to enjoy a full snowy day is to start with a nourishing breakfast.
Even better— this is the kind of recipe that you can sub out pretty much any part of, for whatever you have on hand. The one component you need to make sure you have is a protein rich in HEALTHY fats.
Jowl bacon, or pretty much anything in the Breakfast Box, is going to be an easy win here. Even ham steaks with a dollop of LBR lard to cook in will work for this! I like jowl bacon best because it is so rich in our clean, delicious fat, without compromising on that bacon you love.
Play-All-Day Breakfast Hash
serves 4
Ingredients
2 large sweet potatoes, or a root vegetable of your choice, chopped into bite-sized cube
1 small yellow onion and 1 leek, or any combination of your favorite alliums
1 can of black or red beans
1/2 bunch kale, chopped and stems removed
Salt and pepper
Red pepper flake
Cilantro, Parsley, or your favorite aromatic herb of choice
1/2 pound Late Bloomer jowl bacon (or any breakfast box cuts with an extra bit of LBR leaf lard)
4 Late Bloomer Ranch eggs, over easy or however you like them!
Preparation
1. Par boil the sweet potatoes and strain, set aside (you want them just fork-tender, as they will finish in the skillet)
2. Fry the jowl bacon in your cast iron skillet, or roast in the oven, and chop into little bits
3. Remove the meat with a slotted spoon and set aside, leaving the fat and oils from the meat in the pan (plus a little extra as needed).
4. Add your onion and leek, let the onion get translucent stirring regularly
5. Add in the chopped and stemmed kale, allow to wilt
6. Fold in potatoes and beans, stirring to combine. Allow everything to cook until just-crispy!
6. Season with salt, pepper, and red pepper flakes to taste and ideal heat level. Remember that our chemical-free salt cure will bring it's own salty-sweet, divine flavor to the mix.
7. Stir back in the jowl bacon bits. Remove the entire delicious party to a serving plate of choice.
8. Fry the eggs to your desired level of gooey-ness
9. Serve the hash with the fried egg on top, and garnish with aromatic herb of choice. Extra points if you add a tablespoon of kimchi or a dollop of probiotic sour cream.
Cooking for one? Make the whole hash and reheat it daily to enjoy with EASE. Fry the eggs the day-of, and thank me later.
