The Ultimate Winter Breakfast: A Protein-Rich Frittata with Nourishing Ingredients

A quick, healthy, make-ahead breakfast that will keep you energized this winter!

That’s why I swear by this Winter Harvest Protein Frittata. It’s not just delicious and easy to make—it’s fuel for a strong body, sharp mind, and balanced metabolism.

And the best part? It’s made with regeneratively raised eggs and pork, so every bite supports your health, animal welfare, and the environment.

Protein is the key to satiety, steady energy, and muscle maintenance. When you start your day with at least 25-30 grams of high-quality protein, you help:

Winter Harvest Protein Frittata
Ingredients
  • 8 Late Bloomer eggs
  • ⅓ cup heavy cream (or full-fat coconut milk)
  • 1 ½ to 2 cups Late Bloomer ham steak, diced
  • 1 ½ cups seasonal winter vegetables (e.g., kale, Brussels sprouts, Swiss chard, or cooked winter squash)
  • ¾ cup mushrooms, sliced (optional)
  • ⅓ cup onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 2 tablespoons butter, ghee, or tallow
  • ¾ cup shredded raw-milk cheese (optional)
Instructions
  1. Preheat & Prep: Set your oven to 375°F (190°C).
  2. Sauté Vegetables: In a cast-iron skillet, melt butter/ghee/tallow. Sauté onions for 2 minutes, then add garlic, mushrooms, and winter veggies. Cook until softened, about 5 minutes.
  3. Cook Ham: Stir in the diced ham and let it sear slightly.
  4. Whisk Eggs: In a bowl, whisk together eggs, heavy cream, salt, pepper, and smoked paprika.
  5. Combine & Cook: Pour the egg mixture over the sautéed ingredients. Let it cook on the stovetop for 2-3 minutes until the edges start to set.
  6. Bake: Sprinkle cheese on top (if using), then transfer the skillet to the oven. Bake for 12-15 minutes, or until fully set.
  7. Serve & Enjoy: Let it cool slightly before slicing. Enjoy warm, and feel nourished, strong, and satisfied!
